Spaghetti with Zucchini

Hello! I think I’ve had my Instant Pot for now two years (Black Friday deal) and it has definitely taken me awhile to really love this new appliance. I’ve been finding little tricks with the Instant Pot to save a bunch time when I’m making dinner.

And this meal idea is super quick! Throw in, do some other things… fold some laundry… check e-mail… whatever it is.. the Instant Pot  will magically turns these ingredients into dinner 🙌🏼!

Instant Pot Easy Spaghetti with Zucchini

Dinner is done in a snap with this recipe. Pair it with a salad and sour dough garlic bread for a complete nutritious meal.

Ingredients

  • 1/2 lb. hamburger
  • 1/2 package spaghetti noodles
  • 1 jar (23.5oz) spaghetti sauce
  • 2 zucchinis, chopped
  • 1 1/2 cups water

Instructions

  • 1. Place all ingredients in the Instant Pot and turn to pressure cook setting for 10 minutes.

    *If noodles are thicker, cook for 11 to 12 minutes.

331 calories; 12 gms fat; 43 gms carbohydrates; 15 gms protein

 

 

*Note: If you don’t have cooked hamburger on hand, no problem! Just saute fresh hamburger and cook in the insta-pot. Then follow directions accordingly. I just had some cooked hamburger on hand from a previous meal (#cookonceeattwice).

 

An easy side salad to compliment the pasta.

 

Sourdough bread does have some health benefits.

    -Sourdough is a natural probiotic
    -May be easier to digest for those with gluten intolerance
    -Help absorb nutrients

-Helpful for diabetics  (longer fermentation process breaks down carbs)

The science is really fascinating when it comes to probiotics and sourdough. Gut health is a very important topic and becoming a little trendy, too. I guess that’s good because people want to feel better!

Now, I’m sure if you make your own sourdough bread, there may be more benefits, but using it for garlic bread is nice variety for something different.

Yes, you could always skip the noodles and use zucchini noodles, but honestly it’s not the same 🤣. So why not have zucchini with some noodles…

Zucchini is rich in antioxidants that are extremely helpful in keeping the eyes, skin and heart healthy plus it has been shown to help decrease the risk of a variety of cancers.

Tomatoes sauce or marinara sauce is high in lycopene. Think of lycopene like a sunscreen for your skin. Lycopene has been linked in preventing prostate cancer.

*Cooked tomato products such as sauces, pastes even ketchup have been shown to have higher levels of lycopene than fresh tomatoes. Cool, right?!
