Hello friends! I love a warm, comforting soup. Soup is so filling and my favorite recipes are the ones where I can dump-pour-heat-eat. š Thatās kinda catchy (Iāll use that later).
Salsa soups are an easy way to provide a powerful punch of flavor with few ingredients. Iām a fan of those āno-recipeā recipes!
Simple ingredients with a little chopping and I have myself a fast, filling lunch!
The pre-cooked grilled chicken strips package is from Target. Any green salsa will do, but this one is from Target, too.
I used reduced-sodium chicken broth since salsa is pretty high in sodium, itās a good idea to use a lower sodium broth because it will increase the total amount per recipe. The organic reduced-sodium chicken broth shown in the picture is from Aldi.
Green Salsa Chicken Soup
Ingredients
- 2Ā cupsĀ cooked chicken, chopped
- 2Ā cupsĀ chicken broth
- 2Ā bell peppers, chopped
- 1Ā jarĀ green salsa
Instructions

1. Place all ingredients in a pot and place on the stove. Bring to a simmer for about 10 to 15 minutes. Serve with tortilla chips and shredded cheese.
*Option #2 Place all ingredients in a crock-pot and heat on LOW for about four hours.
Notes
A little sprinkle of cheese makes a great topping and I enjoy scooping up those last bites with some tortilla chips.
