Kind of see a theme here these days\u2026 hmmm\u2026 Well, here\u2019s another recipe to bake and enjoy!<\/p>\n<p>Banana bread, muffins, coffee cake, cinnamon rolls and energy bites are all my favorites with coffee (cappuccinos\/lattes). This really makes me miss having friends over for coffee\ud83d\ude22. Hopefully very soon I can bake this for my friends and have a cup of coffee.<\/p>\n<p>I really love this recipe because of I don\u2019t use as much sugar and flour in this recipe. Which the bulk of the recipe is bananas. I know bananas sometimes get a bad \u201crap\u201d for those watching their carb intake but this fruit actually has some very interesting science regarding it\u2019s benefits. Banana are a good source of fiber, magnesium, potassium, vitamin C, vitamin B6 and more.<\/p>\n<p>One medium-sized banana contains about three grams of fiber.\u00a0 The average American should consume about 25 grams of fiber each day(1).\u00a0 Many of Americans only get about half of the recommended amount.\u00a0 Fiber is an important nutrient that comes from whole grains, fruits and vegetables.<\/p>\n<p>Potassium is essential mineral and electrolyte that is important in the body for muscle contractions, proper heart functions and maintaining adequate water balances.\u00a0 \u00a0This high-potassium food is helpful for preventing heart disease by keeping blood pressure down. Lightly grease a 9&#8243; x 5&#8243; loaf pan or six small 3.8&#8243; x 2.5&#8243; mini loaf pans.<\/p>\n<div class=\"wprm-spacer\"><\/div>\n<p>1. In a mixing bowl, stir together bananas, oil, eggs, sugar and vanilla.<\/p>\n<div class=\"wprm-spacer\"><\/div>\n<p>2. Mix together flour, baking soda, baking powder, cinnamon and salt.<\/p>\n<div class=\"wprm-spacer\"><\/div>\n<p>3. Combine wet and dry ingredients. Stir in mini chocolate chips.<\/p>\n<div class=\"wprm-spacer\"><\/div>\n<p>4. Place batter into loaf pan(s).<\/p>\n<div class=\"wprm-spacer\"><\/div>\n<p>5. Bake bread for about 60 to 70 minutes, tent with foil after 50 minutes. If using mini bread pans bake for about 24 to 26 minutes.<\/p>\n<div class=\"wprm-spacer\"><\/div>\n<p>6. Remove bread from oven and cool for 10 minutes.
